40g or 1/2 cup rolled oats
2 tbsp almond milk
2 tbsp egg whites
1 tbsp unsweetened applesauce
1 tbsp pumpkin puree
50g or 1/3 cup chopped apple
1/4 tsp pumpkin pie spice
1/4 tsp maple extract
1 tsp ground flaxseed
Dash of salt
Stevia to taste
After two attempts with this recipe, I finally got it down! The banana french toast was a success, so I figured I'd give it a wing for some other flavors. The egg whites and maple extract just add the finishing touches to make this oatmeal "french toast" style. I also made this with rolled oats as well because it is much more common than spelt flakes. So it took some playing to figure out the liquids since oatmeal requires less liquid and I had two different purees in this bake. But what a success it was. If you loved the banana french toast oatmeal, you'd love this one. Amazing way to start my Monday morning, especially since I didn't get much sleep. Sleep is crucial and I'm still a bit off from this time change. It just makes me love Saturday and Sunday sleep in mornings that much more. Oh what a case of the MONDAYS. Dice apples and toss everything into a bowl and mix well. Lightly spray dish with evoo or use coconut oil and poor in mixture.
Bake in oven at 350F for 30 minutes.
