Jumbo Lime Black Bean Fajita Taco
Well I have been eating and breathing work lately that I almost forgot to eat and breathe food. Ok, impossible for me. However, I have not been able to share some of my foodies with you. This one was simple and a quick dish for such a crazy week I've been having. So next time you are strapped for time, try a quick and easy jumbo taco or two for a fast, healthy and easy clean up meal. Oh and I might be slightly mia for the weekend...I've got hikes and fun in the sun planned! Hope you all have an incredible weekend if I don't talk to you till Monday. Saute onions and bell peppers until you can pierce with fork. In a bowl, smash black beans with water, lime juice, spices, 1/2 tbsp cilantro and garlic. Microwave for 15 seconds to heat up right before applying spread to taco. Lightly toast tortilla on stove and apply black bean spread, then stuff with fajita vegetables and top off with some more lime juice and cilantro.
1 low carb high fiber tortilla
40g or 1/4 cup black beans
60g or 1/2 green bell pepper
60g or 1/2 red bell pepper
40g or 1/4 cup yellow onion
1/2-1 tsp lime juice
1 tsp water, filtered
1 tbsp freshly chopped cilantro
1 tsp minced garlic
1/2 tsp oregano
1/4 tsp cumin
Dash of chili powder
Salt and pepper to taste

60g or 1/2 red bell pepper
