Sweet N' Savory Butternut Squash Oat Bran
I've been so flooded with work lately, my stories have become shorter and my recipes have been non-existent so I wanted to take a brief moment and share this easy recipe with you. A great meal for breakfast or dinner. Sweet and savory, vegetables and fruit, herbs and spices, carbs, fiber, calcium and protein....you really cannot go wrong here. I hope you enjoy!
Bring 1 cup water to a boil, add oat bran and salt. Turn to low to simmer while stirring often. Saute squash with cinnamon separately and make cranberry sauce after squash is complete and added to oat bran. Mix in milk and sage, then remaining ingredients. Let cook until desired texture and top off with cranberry sauce. Very simple and delicious.
Approx. 208 calories. Serving size is 1.
