Almond Joy Waffles (V/GF)


Almond Joy Waffles (V/GF)
40g or 4 tbsp oat bran
20g or 2 tbsp red lentils, ground into flour
3g or 2 tsp almond meal
1/2 tbsp unsweetened applesauce
5 tbsp almond milk or water
1/2 tbsp white wine vinegar
1/2 tsp cocoa powder
1/4 tsp almond extract
1/2 tsp flaxseed, ground
1/4 tsp baking powder
1/8 tsp salt
Stevia to taste

Topping
1/2 tsp Agave
1/4 tsp cocoa powder
1 tsp almond milk (for a lighter syrup)
1/4 tsp unsweetened coconut flakes

Speaking of JOY...check out the below picture of me and the triathlete gang doing their brick workout. Oh what a joy...man do they train hard. I did the run portion of the brick because as you can see...my bike was way too advanced for the ride. ;) We all had such great laughs from this....it possibly made their last ride of the brick session a little less painful....perhaps! It was amazing to meet all of these wonderful people and what a "family" they are. They all had each others back, helped when things broke, needed technical help, questions about their workout equipment and gear...just supportive and willing to help in any way. Truly a great group of people and I hope I have the opportunity to get to know them better.


Directions 
Preheat waffle maker. Grind red lentils in coffee grinder. Mix all ingredients except toppings in a blender, Ninja Master, Bullet, etc. Once waffle maker is ready, lightly spray with EVOO. Poor in mixture and let cook until waffle maker is done. My waffle maker tells me when it's done. If yours doesn't...well make sure not to burn these beauties. LOL Top waffles with any topping and enjoy!

Approx. 252 calories for entire recipe. Made 3!
