Blueberry Lemon Poppy Seed Triple Oat Breakfast Bake
20g or 2 tbsp oat bran
15g or 1-1/2 tbsp cup rolled oats
10g or 1 tbsp oat flour
2 tbsp lemon juice or (1 tbsp lemon juice and 1 tbsp almond milk)
1 tbsp applesauce
40g or 1/4 cup blueberries
1/4 tsp vanilla extract
1/2 tsp baking powder
1 tsp ground flaxseed
1/2 tsp poppy seeds
Dash of salt
Stevia to taste

Shame on me...this recipe has been in my draft folder for some time now and I just hadn't posted it. Simply delicious is what this is. You really cannot go wrong with lemon, poppy seed and blueberries. They are a match made in heaven or at least to our taste buds. Did you know that poppy seeds were actually extremely nutritious for you and they give you energy. A great source of carbs, fats, omega 3 and omega 6, fiber and protein. I loaded them up in this triple oat breakfast bake because I was heading out to a 6 mile run on the trails that morning and figured a little extra energy wouldn't be a bad thing. ;) So next time you want to mix things up in the morning breakfast, try adding some poppy seeds. They make a world of difference to the taste and to your bodies nutrition. Eat Up!

Now, get outside on this gorgeous Saturday and play...you deserve it!

Directions
Toss everything into a bowl and mix well. Lightly coat oven safe dish with coconut oil and poor in mixture. Bake in oven at 350F for 30 minutes. Enjoy! A tip: If you don't have oat flour, no worries, just grind your oats in a coffee grinder until it becomes flour. ;) 

Approx. 211 calories. Serving size is 1. Calories from fat 43, 4.8g fat, 0.4g saturated fat, 0.6g polyunsaturated fat, 0.5g monounsaturated fat, 371mg sodium, 38g carbs, 8.9g fiber, 4.4g sugar, 7.7g protein, vitamin a 2%, vitamin c 12%, calcium 11%, iron 14%
