Mini "Meat"loaf's (V/GF)

Mini "Meat"loaf's (V/GF)
356g or 2 cups cannellini beans, canned and washed
120g or 1 cup oat bran
1/4 cup ground flaxseed
145g or 4 stalks celery
35g or 3/4 medium carrot
50g or 1/3 cup onion
2 tbsp applesauce, unsweetened
1 tbsp worcestershire sauce
1 tbsp parsley, dried
1 tbsp minced garlic
1/4 tsp ground mustard
1/4 tsp salt
1/4 tsp black pepper

Topping
1/4 cup tomato sauce, plain, no salt added
Dash of parsley, salt and black pepper

I remember when my mom used to make meatloaf and she would always get both hands into the bowl and mash everything well. She would mix and mix and her hands were always a sticky mess of all that red icky meat. It wasn't any fun if you ask me. Now if it were dough, brownies, cookie batter, etc. that I'd have to get my hands all sticky to prepare, then that would be an entirely different scenario. I'd be licking my fingers raw after mixing that. With meatloaf, it was a no go with the "meat" factor and eggs....just a big-O mess. So as I mixed my "meat"loaf and smashed those beans well, I realized that I could in fact lick my fingers raw! There wasn't anything in the mix that was holding me back. So the sticky, gewy mess I just made was shall I say...WELL WORTH IT! To top it off, these bad boys tasted scrupdilouptious! I was extremely excited to eat them for dinner after pre-testing with the "licking" technique. Something about licking off the finger vs a spoon just changes everything. ;) Ahhhh, so lick away with preparing this recipe. I give you permission. Oh and did I mention how easy this was to make? Not only that, but look at all those left overs you can toss into the freezer and enjoy later. One thing I love about making burgers, meatloaf, meatballs, etc. is that I can make in batches and freeze them! Easy quick meals when I don't have time to cook and great for lunches at work. So, go bake them mini meatloaf's...you wont be sorry. You can also make in one large loaf and slice it up. I just thought the muffin pan was too cute. ;) I'm all about cute.

Directions
Add celery, carrots and onion in a Ninja Master or food processor and chop well. Add all ingredients into a bowl and smash well. Hands for mashing is optional. ;) Spray muffin pan and place 2 tbsp into each cup. Preheat oven to 400F and bake meatloaf for 30 minutes. When there is 10 minutes left, add topping mixture to each mini loaf and place back into the oven to finish baking. Let cool down and serve!

Approx. 72 calories. Serving size is 1. Recipe makes 12.
