PB&J Waffles (V/GF)

PB&J Waffles (V/GF)
20g or 2 tbsp red lentils, ground into flour
40g or 4 tbsp oat bran
1/2 tbsp unsweetened applesauce
5 tbsp almond milk or water
1 tbsp white wine vinegar
2 tsp Pb2 organic powdered peanut butter
1/8 tsp cinnamon
1/4 tsp vanilla extract
1/4 tsp baking powder
1/8 tsp salt
Stevia to taste

Filling (any fruit, microwaved)
25g or 2 tbsp raspberries
10g or 1 tbsp blueberries
Dash of stevia

GUESS WHAT TIME IT IS??? It's Peanut Butter Jelly Time!

You are never too young to have a peanut butter and jelly sandwich. Now the problem with a regular PB&J is that it's typically made with full on fatty peanut butter, regular sugary preserves or jelly and non gluten free bread. So many things right there I refuse to put into my body...so I made a healthy gluten free, sugar free and low fat breakfast waffle peanut butter and jelly sandwich. Talk about out of this world. Instead of making plain waffles with peanut butter and jelly inside, I went one step further and mixed in the powdered peanut butter into the waffle mixture. If you can find this powdered, buy it, it's awesome! It's 85% less fat than regular peanut butter. You can purchase it online too if you follow the links. :) I found it at Jimbo's and I was thrilled. They just started carrying it. :) I did my little happy dance when I saw it. ;) Now, where's the chocolate version? LOL Then I mixed berries together, heated them up slightly and added some stevia. Perfect for this waffle sandwich. ;) One thing I also love about this breakfast, besides it's pure awesomeness, is that it has 12g or protein, 13g of fiber, high in iron and low in fat and natural sugars. WOW!

So go enjoy your Sunday after this amazing jump starting breakfast! I know I will. ;) I guarantee you'll be making this recipe more than once.

Directions 
Preheat waffle maker. Grind red lentils in coffee grinder. Mix all ingredients except fillings in a blender, Ninja Master, Bullet, etc. Once waffle maker is ready, lightly spray with EVOO. Poor in mixture and let cook until waffle maker is done. My waffle maker tells me when it's done. If yours doesn't...well make sure not to burn these beauties. LOL Fill waffles with any fruit, jelly, preserve, etc. and enjoy!

Approx. 247 calories for entire recipe. Makes 2 waffles with filling.

  1. I just made these! Not bad! I will have to go buy Evoo. I have heard about pb2 I need to purchase it. I made a filling out of strawberries and greek plain yogurt with some stevia! That is my specialty.

    1. The PB2 makes this recipe. I'm so sorry you didn't have it. :( It gives it peanut butter flavor and helps with the texture of the waffle.

  2. The texture was grainier than I am used to but it was tasty. I put 1 tbsp of reduced fat pb in it to substitute but when I get paid I am going to buy the PB2. My friend Jennifer swears by the PB2. Her favorite breakfast is Cream of rice and 3 tbsp of Chia seeds with PB2 and two scoops of the BBV Shake mix. She is a personal trainer so I am sure it is great!

    1. Yes, the PB2 should help with the grain texture since it has a flour like base. Peanut butter should have helped too but tends to make them less bread like and gewy. But I make some waffles on the gewy side because...well...I like it! ;)

    2. Just curious Lisa, did you grind the lentils completely to a powdered (flour) and blend everything together (oat bran) and all? It shouldn't have been too grainy.
