Pumpkin Quinoa Waffles (V/GF)

Pumpkin Quinoa Waffles (V/GF)
20g or 2 tbsp quinoa flakes
20g or 2 tbsp quinoa flour
1 tsp unsweetened applesauce
4 tbsp almond milk or water
2 tsp ground flaxseed (4 tsp water) flax egg
45g or 2 tbsp pumpkin puree
1/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp pumpkin pie spice
1/2 tsp cinnamon
1/4 tsp maple extract
1 tbsp apple cider vinegar
1/8 tsp salt
Stevia to taste

1 tsp Agave Nectar

Why don't we mix things up, shall we? Who loves quinoa??? I do! I don't post much with quinoa because it's just a simple grain that is great for warm/cold salads and everyone pretty much knows what to do with it. I guess it's a bit boring for me since so many people already use quinoa and know of it. Well, when I got my hands on quinoa flour and flakes, that was the beginning of the inventions. My favorite is experimenting and when it goes right, I do my little happy dance. So, watch out, cause I was dancing all morning long after these beauties. Best part is that I just had my review at work...NAILED IT! Best review ever! I guess hard work really does pay off. It's celebration time and what better way to celebrate but with these pumpkin quinoa waffles! Healthy, gluten free, vegan, soy free, nut really cannot go wrong here.

I love that the entire family plays golf and that we could take him out for the day. He has helped improve my game and reminds me always to keep my stubborn head down. Preheat waffle maker. Add all ingredients to blender blender, Ninja Master, Bullet, etc. and mix. Once waffle maker is ready, lightly spray with EVOO. Poor in mixture and let cook until waffle maker is done. My waffle maker tells me when it's done. If yours doesn't...well make sure not to burn these but I like to cook them slightly longer so the outside has a crispness. Top waffles with any topping and enjoy!

Approx. 220 calories for entire recipe. Made almost 4!
